Begin by generously spraying your egg bites mold with cooking spray. Set aside.
In a high-speed blender, combine the eggs, shredded Gruyere cheese, cottage cheese, heavy cream, one tablespoon of fresh chives, salt, and pepper, to taste. Blend on medium speed until all is completely smooth, about two minutes.
Gently pour the egg mixture into each prepared egg bite mold approximately halfway. Using only 1/4 cup of the bacon, sprinkle some bacon into each mold. Then use the remainder of the egg mixture to fill each mold to the top.
Garnish the tops of the egg bites with the remaining 1/4 cup of bacon crumbles and fresh chives. Using your finger, gently press the bacon and chives inward.
Place the silicone cover that came with your egg bite mold securely over the top. If your mold did not come with a cover/lid, you could loosely cover your mold with tin foil. Do not attempt to use a plastic cover.
Prepare your instant pot by pouring one cup of water into the inner pot. Carefully place your egg bite mold on the trivet rack with long handles. Guide it slowly into the bottom of your instant pot.
Next, place the lid on the Instant Pot. Set the Instant Pot to Sealing Position and cook on Manual High Pressure for 9 minutes.
Carefully set your Instant Pot to Venting Position to allow for a Quick Release once the Instant Pot is finished cooking. Remove the lid of the Instant Pot. Using your silicone mitts, carefully grasp and guide the trivet rack out of the pot.
Allow your egg bites to rest for several minutes before attempting to remove them from the mold as they will fall apart. Once they are cooled, about 5-10 minutes, they will be much easier to remove. Gently peel back the sides of the egg bites mold, and your egg bites will easily glide right out.
