DouxMatok, an Israeli startup company, has invented a way to replicate the sweet flavor of sugar we've come to love by cutting sugar by 55%. That's more than double as much as other popular sugar substitutes cut back! The new substitute coats food-safe nanoparticles of cellulose and silica (what sand is made of!) with real sugar.
The food-safe nanoparticles make this new artificial sugar healthier because silica and cellulose aren't absorbed by the body; they simply pass through it. Although, like with any new invention, there are some concerns. But, let's just focus on the fact that brownies and cake have a future of being half as unhealthy. Now that is what dreams are made of!
