Wash potatoes. Peel and cut potatoes into half inch cubes.
Place the potatoes in a medium pot with salted water. The water should cover the potatoes by one inch
Bring the potatoes to a boil. Cook until they can be easily pierced with a fork (about 15 minutes.)
Peel and mince the garlic while the potatoes are cooking.
Remove the pot from the heat and drain the potatoes and place them in a separate bowl. Heat a drizzle of olive oil in the same pot used to cook potatoes over medium heat and cook garlic until aromatic.
Turn the heat down to simmer. Return your potatoes to the pot. Begin mashing potatoes with a fork or potato masher until smooth.
Mix in sour cream. Gradually add in milk until the mashed potatoes have reached your desired consistency. Season with salt and pepper to taste. Serve with a pat of butter and a garnish of fresh parsley.
