COFFEE CUP QUICHE

Start to finish: 4 minutes (prep: about 3 minutes)

Servings: 1

1 Egg
1 ½ tablespoons milk
Salt
Ground Black Pepper
¼ of a bagel
2 teaspoons cream cheese
½ slice ham or prosciutto
Fresh thyme or chives (optional)
Mustard (garnish)

1. In a microwavable coffee cup, beat together egg and milk. Add salt and pepper to taste. Tear bread into small dime-size pieces. Stir in bread. Add cream cheese; stir until incorporated. Slice ham or prosciutto into small pieces and add to mixture. Sprinkle thyme leaves or chopped chives over the top.
2. Microwave coffee cup mixture on high until cooked through, or about 1 minute 10 seconds. Garnish with mustard and fresh thyme or chives.
