MICROWAVE MUG PUMPKIN PIE
Start to finish: 10 minutes (prep: 5 minutes)
¾ cup pumpkin puree
¼ cup milk
1 egg yolk
¼ cup sugar
¼ teaspoon pumpkin pie spice
½ teaspoon vanilla extract
1. In a bowl, add all ingredients and
mix until combined.
2. Divide mixture into two
3. Microwave each mug on high until
custard looks firm, about 2 minutes. Check for doneness and microwave for 15
second intervals until cooked through.
