MICROWAVE PB and J MUG CAKE
Start to finish: 5 minutes (prep: 3
minutes)
Servings: 2
3 tablespoons peanut butter
1 large egg
1 tablespoon vegetable oil
¼ cup milk
¼ teaspoon vanilla extract
¼ cup packed brown sugar
1/3 cup self-rising flour
pinch of kosher salt
2 tablespoons jelly
1. In a bowl, whisk together peanut butter and
egg. Add oil, milk, vanilla, and sugar, stir until incorporated.
2. Add flour and salt and beat together until smooth. Divide the batter
between two mugs. Top each with a tablespoon of jelly.
3. Microwave each mug on high separately until
firm and risen, about 1 ½ to 2 minutes each.
