Lasagna is a delicious and filling meal, but those broad noodles are loaded with carbs. For a healthier twist, you can use zucchini instead of noodles. Start with 5 zucchinis, and cut the ends off. Then slice them all length-wise into about 4-5 slices.
Use the zucchini slices to cover the bottom of a baking dish. Spread 1/2 cup of tomato sauce on the zucchini and then sprinkle on ricotta and mozzarella cheese to your liking. Top the cheese with a few rounds from a sliced red onion, and continue this layering process two more times. Top the dish with the last zucchini slices, and a little bit of tomato sauce and cheese, then add pepper. Bake the dish at 400 degrees for 60-70 minutes
