There’s something about pop-able brownie bites that just makes us feel okay for eating 5 of them at one time (seriously, we won’t judge if you do, they’re that good). These chewy and creamy little bites contain the best of 3 worlds with cheesecake, brownies AND pumpkin. We’re positive these brownie bites will quickly become your go-to fall treat!
All you’ll need for these pumpkin spice brownie treats are a box of brownie mix, 1/2 cup vegetable oil, 3 eggs separated, 3 tablespoons milk, 4 ounces cream cheese, 1/2 cup pumpkin puree, 1 teaspoon pumpkin pie spice and 3 tablespoons sugar.
First preheat the oven to 350 degrees and grease a mini cupcake pan. In a large bowl combine brownie mix, vegetable oil, 2 eggs and milk until combined into a batter. Fill the mini cupcake tin with brownie batter, about 3/4 of the way full. In a different bowl, mix 1 egg, cream cheese, pumpkin puree, pumpkin pie spice and sugar until well combined. Place a teaspoon of the cream cheese and pumpkin mixture on top of the brownie batter. Bake for about 12 to 15 minutes! Take out, let cool and dig your teeth into these gooey, pumpkin-y mini brownie bites. Yum!
