You’ve heard of milk chocolate, dark chocolate and white chocolate, and now there’s a brand new type of chocolate on the market and it’s bound to get millennials interested. Created by the Swiss cocoa icon Barry Callebaut, this new variety of chocolate has been named Ruby chocolate in a nod to its natural, pinkish-red hue. This rosé-tinted chocolate has taken 13 years to develop and now it’s finally ready to make its world debut!

The chocolate is made from the Ruby cocoa bean and has no added coloring or flavoring – that pink color is totally natural. It has a faint berry flavor and those who’ve tried it describe it as “sour, yet sweet.” The makers hope that the unusual, bright color will appeal to the Instagram and Snapchat savvy millennials for whom appearance is everything. “It’s natural, it’s colorful, it’s hedonistic, there’s an indulgence aspect to it, but it keeps the authenticity of chocolate,” the CEO of Barry Callebaut told Bloomberg. “It has a nice balance that speaks a lot to millennials.”

This new brand of chocolate comes about 80 years after the invention of white chocolate, so the world has definitely been fiending for something new. Right now, ruby chocolate is making its rounds in Shanghai, China, but before long it’ll be in a supermarket near you! It’s hoped that by Valentine’s Day 2018, there will be naturally pink, ruby chocolate hearts available for the sweetheart in your life.

We are honestly so pumped about this new chocolate flavor, we don’t know what to do! This is one of those inventions that’s a once-in-a-lifetime affair. But until we’re able to get our hands on this newfangled chocolate, we’ll have to make due with the three types of chocolate we’ve got now. Is anyone else’s stomach rumbling?
