Skip the oven and use the microwave for this fast pizza-making hack. This genius recipe is thanks to Gemma over at Bigger Bolder Baking, who gave us the best thing since, well, pizza itself!
Here are the steps:
(Measurements for ingredients listed at the end)
1. Grab a small microwavable mug and mix flour, baking powder, baking soda and salt together in the mug.
2. Add milk and oil and whisk them together – it’s okay if it’s a little lumpy!
3. Spread your marinara sauce all over the top of the batter.
4. Top it off with your cheese, mini pepperoni, and herbs. Now, pop it in the microwave for about 1 minute and 20 seconds, or until it rises up and the top is bubbling.
Carefully take the mug out, grab a spoon and dig into the delicious, cheesy goodness. It’s literally that simple.

4 tablespoons all-purpose flour
1/8 teaspoon baking powder
1/16 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons milk
1 tablespoon olive oil
1 tablespoon marinara sauce
1 generous tablespoon shredded mozzarella cheese
5 mini pepperoni
1/2 teaspoon dried Italian herbs (basil, oregano, etc.)
