    Making A Fresh Cranberry Walnut Chicken Salad

    Jazz up your typical chicken salad recipe with our fun twist, a cranberry walnut chicken salad! It’s the perfect balance of sweet, tangy, crunchy, creamy and super satisfying. It’s sure to become one of your lunchtime go-to meals.

    What You’ll Need

    • Chef’s knife
    • cutting board
    • measuring cups
    • mixing bowl
    • wooden spoon
    • whisk
    cracked walnuts

    Ingredients

    • 4 cups shredded rotisserie chicken
    • 1 cup chopped walnuts, toasted
    • 1 cup diced celery
    • 1 cup cranberries, dried
    • 1 tsp salt (we prefer Himalayan pink sea salt)
    • 1 tsp fresh cracked black pepper
    • 2/3 cup mayonnaise
    • 1/2 tbsp Dijon mustard
    • 1/2 tbsp champagne vinegar or white vinegar
    • fresh parsley

    Instructions

    Step #1: Build your dressing

    Combine mayo, mustard, and vinegar in a bowl. Whisk until smooth.

    Step #2: Dry ingredients

    Add the chicken, cranberries, walnuts, and celery to the bowl. Toss until evenly coated.

    Step #3: Season and garnish

    Season salad with salt and pepper. Garnish with a handful of fresh chopped parsley.

    Step #4: Chill, then serve

    Chill in refrigerator for 2 hours. Next, enjoy the cranberry walnut chicken salad! We love filling lettuce cups for a low carb option or making a traditional sandwich with crusty, toasted bread.
