Vegan pizza almost sounds like an oxymoron, but luckily there are some killer options now available. And, we've rounded up the best plant-based pizzas for your eating pleasure. For ease on weeknights, we like to start with a pre-made crust. Trader Joe's has a great low carb and gluten free option with their Frozen Cauliflower Crust. Another good choice is Trader Joe's Fresh Sprouted Whole Grain Crust. Amazon has a "just add water" Vegan crust too.
Bake crust according to package directions. While cooking, thinly slice the tomatoes and mince the garlic. Then, remove crust from oven.
Brush finished crust with olive oil. Sprinkle mozzarella-style cheese shreds over crust. Top with sliced tomatoes and minced garlic. Season liberally with salt and pepper.
Bake at 400 degrees for 12 minutes until cheese is melted. Carefully remove from oven, add the basil, drizzle with balsamic, and serve immediately.

While crust is cooking, cut cube the squash and remove seeds. Put on baking sheet, then drizzle with olive oil and sprinkle with salt and pepper. Roast at 400 degrees for 35-45 minutes.
