    Making A Killer BBQ Jackfruit Sandwich

    Jackfruit, a healthy vegan alternative to shredded meat, pairs perfectly with rich and tangy barbeque sauce. Not only is it excellent in BBQ tostadas and pizza, we love Jackfruit in pulled “pork” sandwich form.     What You’ll Need

    • wooden spoon
    • measuring cups
    • medium skillet
    • cutting board
    • colander
    • Chef’s knife
    • potato masher
    • baking sheet

    Ingredients

    • 1 can Trader Joe’s Green Jackfruit in Brine
    • 1 jalapeño
    • 1 small white or yellow onion
    • 1 tbsp olive oil
    • ½ cup BBQ sauce (our favorite is Tessemae’s)
    • 1 clove garlic
    • ½ cup water
    • 4 whole grain vegan buns, gluten-free if necessary

    Instructions

    Step #1: Prep Ingredients

    Drain the jackfruit, place in colander, then rinse with water. Set aside. Carefully dice onion and jalapeño, and mince garlic. Preheat oven to 350 degrees.

    Step #2: Sauté Success

    Heat olive oil over medium-high heat. Once warmed, add the jalapeño and onion and sauté for a couple minutes, stirring often. Add garlic, and continue cooking for another couple minutes until onions become translucent. In oven, bake buns for about 5 minutes, until lightly toasted. Remove from heat; set aside in bread basket covered with napkin to avoid them getting stale.

    Step #3: Simmer Down Now

    Lower heat to medium, then put BBQ sauce and jackfruit into skillet. Stirring occasionally, cook for 8 more minutes. Add the water gradually throughout those 8 minutes, careful not to let mixture become too thin. With potato masher, smash and pull the jackfruit until it becomes pulled pork consistency. Then cover and simmer for 10 more minutes over low heat, stirring once a minute.

    Step #4: Stunning Sandies

    Place about ½ -2/3 cup of the mixture onto a toasted bun. Optionally garnish with ¼ cup of coleslaw, and serve with potato chips or fries.
