    Quick And Easy Artichoke Purée

    A fresh, spiky artichoke can be a little intimidating when spotted at the grocery store. We like to reap the benefits of artichokes in a more palatable way, using canned artichoke hearts. Read on for our quick no-bake artichoke purée!

    What You’ll Need

    • blender or food processor
    • can opener
    • citrus juicer
    • colander
    • measuring cups
    • Chef’s knife
    • cutting board

    Ingredients

    • 1 can quartered artichoke hearts
    • 1 lemon
    • salt and pepper
    • 1 tsp garlic powder
    • ½ tbsp. olive oil

    Instructions

    Step #1: Prep Ingredients

    Drain, then rinse artichoke hearts in colander under cold water for about a minute. Cut lemon in half, then manually juice it until there’s 1 tbsp of fresh-squeezed juice.

    Step #2: Blend It Up

    Combine artichoke hearts, lemon juice, garlic powder, and olive oil in blender. Season liberally with salt and pepper. Blend until smooth.

    Step #3: Serve And Enjoy!

    This dish pairs well with lamb, mixed into your favorite salad or dolloped onto steak. It can even be combined with Greek yogurt to make a savory vegetable dip! We like it cold, but it can be warmed in a skillet for a few minutes if that’s your preference.
