    Plan Ahead With Our Favorite Pumpkin Pie Overnight Oats Recipe

    Overnight oats are an easy and nutritious way to start your day. With just a quick prep the night before, you’ll be ready to tackle your work to-dos with renewed gusto. Read on for our favorite overnight oats recipe, inspired by a classic comfort food!

    What You’ll Need

    • mason jar with lid
    • measuring cups
    empty mason jars with lids

    Ingredients

    • handful of almonds, non-roasted and unsalted
    • ½ cup unsweetened vanilla almond milk
    • 1 tbsp pumpkin puree
    • 1 tsp vanilla bean paste
    • ½ cup rolled or steel-cut oats
    • 2 tsp pumpkin pie spice blend
    • ½ tsp cinnamon
    • ½ tbsp chia seeds

    Instructions

    Step #1: Overnight Soak

    Place all ingredients besides almonds and cinnamon into a mason jar, then cover with lid and shake to combine. Let soak overnight in refrigerator. We recommend a two-night soak if you chose steel-cut oats.

    Step #2: Morning Majesty

    The following morning, stir jar well, then top with almonds and pinch of cinnamon.
