    Instructions

    Step #1: Fantastic Flour

In mixing bowl, combine flour, salt, pumpkin spice, and baking soda until even. Then, preheat oven to 375 degrees.

Step #2: Sugar Sugar How You Get So Fly

In bigger bowl, combine the melted butter and two types of sugars with hand mixer until fluffy. Add purée, vanilla paste, and egg until smooth.

    Step #3: Chips Ahoy

Next, beat flour into mixture until fully enveloped. Slowly fold in the chocolate chips, and refrigerate dough for roughly 20 minutes. While dough is cooling, line two baking sheets with parchment paper.

    Step #4: Bake Away

Using a spoon or your hands, scoop about one inch balls of dough and place on sheet. Leave approximately two inches of space between each cookie. Bake for about 10-12 minutes. You’ll know the cookies are ready when they appear golden and begin to puff up around the edges. Let the cookies cool and dig in!

    Variations

Now that you’ve mastered our basic pumpkin cookie recipe, there is so much room to add some creativity. We’d love to try this treat using different chocolate chip varieties: dark chocolate for a more rich take, and white chocolate for a Halloween vibe and ghoulish display. To bolster the nutritious profile of our cookie, we recommend adding some oats for whole grain goodness. Another option is to up the crunch factor and add extra pumpkin power with the addition of roasted pepitas.

For a softer more doughy cookie, try tinkering with the amount of pumpkin purée by increasing it slowly. Dip your toe in the extra gourmet pond by creating your own homemade pumpkin pie spice blend, which generally consists of cinnamon, ginger, nutmeg, allspice, and cloves. For more pillowy texture, substitute shortening for the butter. There’s truly so much you can do to play with this recipe.

    Wait, What Pairs With Pumpkin?

We’d love to share some ideas for how to serve this delectable autumnal twist on chocolate chip cookies. Pumpkin pairs nicely with apple, another classic fall flavor, so we’d encourage serving it with hot apple cider, preferably spiked. It’s no secret that sage and pumpkin match like two adjacent puzzle pieces; therefore, these cookies would be a great dessert for a seasonal dinner party featuring homemade pumpkin and sage pasta. They’d also go super well with coffee, so could be a brunch sweet on a cold morning, or paired with decaf for post dinner delight.

Overall, we’ve shared our go-to pumpkin chocolate chip recipe, some fun variations, and how to serve these tasty treats. We hope you enjoy busting this knowledge out once fall gets here!
