  • 16 ounces Velveeta cheese
  • 1 can Ro-Tel diced tomatoes and green chilis
  • salt and pepper to taste
  • 1 teaspoon cilantro
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 medium yellow onion, finely chopped

Directions

  1. Cut the block of Velveeta cheese into 1-inch cubes using a chef’s knife. This will speed up the melting process.
  2. Add the Velveeta cheese, Ro-Tel diced tomatoes and green chilis, salt and pepper, cilantro, chili powder, cumin, and yellow onion to a crockpot, cover, and cook for 2 hours on low or until the cheese is completely melted.

How To Make Your Velveeta Queso Dip Your Own

Two-Ingredient Version

You can make a version of our Velveeta queso dip with only two ingredients. Cut a 16-ounce cube of Velveeta cheese into one-inch cubes and grab a can of Ro-Tel diced tomatoes and green chilis. Make sure you don't drain the Ro-Tel. Place the cheese and Ro-Tel into your crockpot and let it cook on low for one to two hours or until the cheese melts.

Add-Ins

You can make this recipe as complicated or as simple as you'd like. Two ingredients get the job done, but if you'd like to toss in a few other ingredients, you can add:

  • ground beef
  • pork sausage
  • jalapeños
  • hot sauce

More cheese always turns the party into a real celebration. Velveeta is obviously the star of this show, but you can easily sprinkle some shredded cheddar or gruyère into the mix. You can also substitute either of these two for the Velveeta if you're not a fan of the processed stuff.
