    Super Simple 2-Ingredient Sweet Potato Pancakes

    Waking up on Sunday morning to the smell of pancakes and bacon is a surefire way to lift our spirits. You know what else gets us out of bed? A simple two ingredient recipe for sweet potato pancakes! Our easy peasy recipe will shave precious time off your cooking, freeing up the day to relax.

    Super Simple 2-Ingredient Sweet Potato Pancakes

    Recipe

    Ingredients

    • 1 large sweet potato, roasted and peeled
    • 2 large eggs, beaten
    • butter or cooking spray for greasing

    Supplies

    • saucepan
    • potato masher
    • potato peeler
    • whisk
    • skillet
    • tablespoon
    • timer

    Directions

    1. Place your sweet potato in a saucepan with water. Bring to a boil (10-15 minutes) until your potato is tender, but still firm. Remove from heat and submerge the potato in cold water. Once it’s cool to touch, remove the skin using a potato peeler, cut in half, and mash.

    2. In a large bowl, add your mashed sweet potato and 2 eggs. Whisk together until combined.

    3. Heat your skillet over medium-high heat. Grease with butter or cooking spray.

    4. Use a tablespoon to scoop out spoonfuls of batter onto the heated skillet. Let cook for 2-3 minutes on one side, then flip and cook for an additional 1-2 minutes or until golden brown. It helps to have a timer with you as these pancakes don’t bubble when they’re ready to be flipped.

    Bring On The Spice

    Though these pancakes really only need two ingredients, you can spice things up with an assortment of additions. A pinch of cinnamon, nutmeg, or allspice are just the tip of the iceberg; sprinkle in your spice of choice to add a dash of flavor.

    Tasty Toppings

    Sweet potato pancakes are incomplete without the proper garnish. A scoop of Greek yogurt, some maple syrup, or handfuls of berries goes great with this recipe. You can also add a pinch of cinnamon on top of your pancakes as opposed to mixing it in with the batter. Cut up a banana or two or get a nice scoop of honey for your sweet potato pancakes too!

    Some adventurous options include:

    • goat cheese
    • pickled jalepeños
    • crumbled blue cheese
    • pecans
    • sour cream mixed with cinnamon sugar
