    An Easy Homemade Chicken Pot Pie

    Including an easy chicken pot pie recipe to your cookbook is essential. When you’re in desperate need of a swift recipe for comfort food, chicken pot pie is a dish you can always turn to. Get your chicken broth and vegetables ready because a hearty slice of pie is coming your way.

    An Easy Homemade Chicken Pot Pie

    Recipe

    Ingredients

    • 2 prebaked pie crusts
    • 6 tablespoons butter
    • 1 large onion, chopped
    • 1/4 cup all-purpose flour
    • 1 1/2 cups chicken broth
    • 1/2 cup milk
    • 3 medium russet potatoes, chopped and peeled
    • 1 large carrot, chopped and peeled
    • 2 teaspoons parsley
    • 2 teaspoons rosemary
    • 2 teaspoons celery seed
    • 2 teaspoons thyme
    • Salt and pepper to taste
    • 1/4 cup frozen green peas
    • 1/4 cup corn
    • 1/4 cup green beans
    • 2 cups cooked or shredded chicken

    Supplies

    • 9-inch pie pan
    • large saucepan
    • whisk

    Directions

    1. Preheat your oven to 425 degrees F.

    2. In a large saucepan, add the butter and onion. Sauté the onions for 2-3 minutes or until soft.

    3. Once the onions are translucent, slowly add the flour and whisk together.

    4. Gently add the chicken broth and milk and stir everything together.

    5. Add the potatoes and carrot to the saucepan and bring to a boil, about 5-10 minutes or until the vegetables are soft.

    6. Add your dry seasoning to the pan.

    7. Stir in peas, corn, green beans, and chicken and remove saucepan from heat.

    8. Add the chicken mixture into the bottom pie crust, placed in a 9-inch pan.

    9. Place the second pie crust on top and trim any excess dough.

    10. Cut slits into the top pie crust.

    11. Bake for 30-35 minutes or until the crust is golden brown.

    12. Let sit for 10-15 minutes until serving.

    For this recipe, we used a premade crust, but a homemade crust can do wonders. Basic ingredients like sugar, flour, eggs, and heavy cream help create the perfect flaky crust you can use with just about any pie.

    Switch Up Your Fillings

    While these are the vegetables and spices we like to use best, you can always switch things up to suit your tastes. Try these out if you’re looking for something new:

    • celery
    • sweet potatoes
    • garlic
    • spinach
    • oregano

    Chicken pot pie is also a good recipe to use any cooked leftover chicken. If you don’t have any stored in the fridge you can easily use some from a store-bought rotisserie chicken.
