Ingredients
- 1 box brownie mix (any chocolate variety)
- 1 cup semi-sweet chocolate chips
- 6 ounces cream cheese, softened
- 7.5 ounces 100% pure pumpkin (half of the can)
- 3 tablespoons granulated sugar
- 1 tablespoon pumpkin pie spice
Supplies
- 8×8 inch baking dish
- cooking spray
- 2 medium bowls
- whisk
- silicone spatula or wooden spoon
Directions
Preheat your oven to 350 degrees. Grease an 8×8 inch baking dish with cooking spray. Set aside.
In a medium bowl, prepare the brownie mix according to the directions on the back of the box. Pour in the chocolate chips. Stir until well combined. Set the bowl aside.
In a separate medium bowl, add the cream cheese. Using a whisk, whip until smooth. Add the pumpkin, sugar and pumpkin pie spice – continue to beat the mixture until it is well blended, completely smooth, and free of lumps.
Using a silicone spatula or wooden spoon, spread half of your brownie mix in the bottom of the prepared baking dish. Next, spread the pumpkin mixture on top of the bottom brownie layer. Cover the pumpkin filling with the rest of the brownie batter. You should have a total of 3 layers.
Bake for 60-75 minutes or until knife or fork inserted in the center comes out clean. Allow brownies to cool in the baking dish for several minutes before serving. Enjoy!
