    There exists a longstanding battle between tortilla chip lovers everywhere: salsa or cheese? Some are prepared to die on the salsa hill, but a super simple Velveeta queso dip is hard to resist. Read on for our recipe and tips on how to turn your dip into something truly special.

    Ingredients

    • 16 ounces Velveeta cheese
    • 1 can Ro-Tel diced tomatoes and green chilis
    • salt and pepper to taste
    • 1 teaspoon cilantro
    • 1 teaspoon chili powder
    • 1 teaspoon cumin
    • 1 medium yellow onion, finely chopped

    Directions

    1. Cut the block of Velveeta cheese into 1-inch cubes using a chef’s knife. This will speed up the melting process.

    2. Add the Velveeta cheese, Ro-Tel diced tomatoes and green chilis, salt and pepper, cilantro, chili powder, cumin, and yellow onion to a crockpot, cover, and cook for 2 hours on low or until the cheese is completely melted.

    How To Make Your Velveeta Queso Dip Your Own

    Two-Ingredient Version

    You can make a version of our Velveeta queso dip with only two ingredients. Cut a 16-ounce cube of Velveeta cheese into one-inch cubes and grab a can of Ro-Tel diced tomatoes and green chilis. Make sure you don’t drain the Ro-Tel. Place the cheese and Ro-Tel into your crockpot and let it cook on low for one to two hours or until the cheese melts.

    Add-Ins

    You can make this recipe as complicated or as simple as you’d like. Two ingredients get the job done, but if you’d like to toss in a few other ingredients, you can add:

    • ground beef
    • pork sausage
    • jalapeños
    • hot sauce

    More cheese always turns the party into a real celebration. Velveeta is obviously the star of this show, but you can easily sprinkle some shredded cheddar or gruyère into the mix. You can also substitute either of these two for the Velveeta if you’re not a fan of the processed stuff.

    Tortilla chips taste amazing with Velveeta queso dip, but lots of other sides work great, too. You can always pour some creamy cheese over your vegetables — what veggie doesn’t taste better slathered in cheese? — or over your pasta. Velveeta queso dip also pairs well with baked potatoes.

    Preparing a simple Velveeta queso dip is as easy as two ingredients, but feel free to add whatever ingredients you’d like. Toss in some ground meat or play around with the cheese for a dip that shows off your personal tastes.
