Insects have been gradually making their way into people’s diet as they are a good source of protein and their reign in the food world isn’t over yet. Now they could become a source of oil as well. Scientists in the Netherlands set out to find which insects would be the best for making cooking oils. Between the yellow mealworm, lesser mealworm, cricket and cockroach, it seems their oil contained several different fatty acids which landed them in the middle of high saturated fat animal oils and cholesterol-free vegetable oils. Insect oils are already used in parts of the world for cooking and can even fight malnutrition, but selling it in other parts of the world might prove to be challenging. Yuck!
