If you’re as obsessed with cheese as we are then you need to see this recipe. You no longer have to go to some fancy cheese store to get the good stuff; you can make homemade ricotta in your microwave! All you need is a few simple ingredients and you have yourself ricotta fit for a cheese connoisseur. To make this homemade ricotta you’ll need milk, heavy cream, salt and lemon juice. You’ll also need a microwave safe glass bowl, a strainer, large pot, spoon, lemon squeezer, thermometer, spatula, teaspoon and cheese cloth.
First, put the strainer over a pot and then line the strainer with a double layer of cheese cloth. Then combine 1 cup heavy whipping cream and 4 cups milk in a separate microwave safe bowl. Add one teaspoon of salt and 1/4 cup lemon juice to the mixture. Microwave the mixture on high for 10 minutes. When clumps start to form and the thermometer reads 200 degrees, the mixture is ready. Use a slotted spoon to scoop the clumps out of the mixture and put into the cheese cloth-lined strainer. Once you’re done with this, pour the rest of the mixture into the strainer. What are the curds in the cheese cloth? That’s your ricotta!! Let it drain for 30 minutes to an hour and a half, depending on the texture you want (the longer it drains, the firmer it gets). Put the ricotta in a container and refrigerate for up to a week! Now get to making your own cheese!
