Hasselback potatoes are an impressive addition to any table. These special spuds have the crispy edges of a French fry with the melt-in-your-mouth inner texture of a baked potato. Gently rinse the potatoes fruit & veggie wash (we recommend Rebel Green Fruit & Veggie Clean, available at Target, Walmart, and local health food stores). Preheat oven to 450 degrees.
Whisk together the butter, olive oil, salt and pepper, and garlic in a small bowl until evenly combined.
Place potato between chopsticks or wooden spoons. Carefully cut 1/8 inch slices, about ¾ of the way through the potato. The chopsticks will keep you from slicing all the way through. Repeat with the other potato.
Line a baking sheet with aluminum foil, then place potatoes on sheet. Pour butter mixture over sweet potatoes, and bake for about 45 minutes.
Carefully remove from oven, season with more salt and pepper, and enjoy!
