    An Easy Melt-In-Your-Mouth Chicken Recipe

    Melt-In-Your-Mouth Chicken

    Recipe

    Ingredients

    • 4 boneless, skinless chicken breasts
    • 1 cup mayonnaise
    • 3/4 cup shredded Parmesan cheese
    • 4 cloves minced garlic
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon paprika

    Supplies

    • 9-by-13-inch baking dish
    • nonstick cooking spray
    • plastic wrap
    • meat mallet (optional)
    • medium bowl
    • silicone spatula
    • instant-read thermometer

    Directions

    1. Preheat oven to 375 degrees. Spray a 9-by-13-inch pan with nonstick cooking spray and set aside.

    2. Next, tenderize the chicken. Wrap the breasts in plastic wrap. Using a meat mallet, or the bottom of a skillet, pound until all the chicken breasts are of equal thickness. Unwrap the chicken breasts and place them into the prepared baking dish.

    3. In a medium bowl, mix the mayonnaise, Parmesan cheese, minced garlic, salt, pepper, and paprika.

    4. Using a silicone spatula, spread the mayonnaise mixture over the tops of the chicken breasts.

    5. Bake uncovered for 30 minutes or until the chicken is cooked through. An instant-read thermometer inserted into the thickest part of the breast will read 165 degrees. Next, broil the chicken breasts under the broiler for 2 minutes until they are slightly browned on top. Serve and enjoy!

    Recipe Notes

    Chicken breasts will vary in size and cook at different rates. The difference in size and the cook time may cause the chicken breasts to be undercooked or overcooked. Tenderizing the meat not only helps the chicken to be tender, but it also creates a more even cook.
