  • 2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • freshly ground black pepper to taste
  • 1 cup whole milk
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 tablespoon milk powder
  • 1/2 teaspoon baking powder
  • 1 cup peanut oil
  • 4 hamburger buns
  • 4 tablespoons unsalted butter, softened
  • 20 dill pickle chips


  1. On a cutting board, carefully slice each chicken breast horizontally to create 4 chicken cutlets.

  2. In a medium bowl, prepare a brine: mix 3 tablespoons of salt, 2 tablespoons of sugar, and the water. Add the chicken, making sure to cover it in the mixture. Set the bowl aside for 1 hour.

  3. In a small bowl, combine the paprika, cayenne pepper, and black pepper. Set the bowl aside.

  8. In a large skillet, heat the peanut oil over medium-high heat.

  9. Remove the chicken from the brine. Pat the cutlets dry with a paper towel.

  10. Season the chicken cutlets with the remaining paprika and pepper mixture.

  11. One at a time, dip each piece of chicken into the milk-and-egg mixture. Then dredge each piece in the flour mixture, shaking off any excess.

  12. Carefully place each breaded chicken cutlet into the hot peanut oil. Fry the cutlets until they are golden and crisp on one side, about 4-5 minutes. Using a pair of tongs, flip the chicken cutlets and fry them for another 4 minutes or until the cutlets reach an internal temperature of 165 degrees on an instant-read thermometer.

  13. While the chicken is frying, preheat the oven to 350 degrees. Halve the buns if necessary, and place them on a baking sheet. Toast the buns until they are light gold in color, about 3-5 minutes.

  14. Transfer the fried chicken cutlets to a paper towel-lined plate to drain any excess oil.

  15. Remove the buns from the oven. Butter each bottom bun with 1 tablespoon of butter. Add 5 dill pickle chips to each bottom bun.

  16. Place the chicken cutlets on top of the pickles and cover them with the top buns. Serve immediately. Enjoy!
