    Blackberry Cobbler Recipe

    Blackberry cobbler is a timeless, delectable summery dessert! A perfect ending to a fun-filled afternoon spent picking fresh berries on the farm or in your backyard. If you managed to save a few, you’re in for an exceptional treat.

    Cobbler is a simple dessert originating from the British American colonies. Steamed or suet puddings were a popular dessert among the English settlers. The ingredients for these favored dishes were not easily accessible, thus a cobbler-like dessert was born. Stewed fruits and layered biscuits for a dessert were more suitable at the time. Many versions of cobbler have emerged since its debut. Whether it has a bottom and top crust or a drop-biscuit or crumb-like topping – cobblers are essentially a classic American deep-dish fruity dish.

    Our blackberry cobbler has a biscuit, crumb-like topping. The baked golden rounds atop the blackberries bestow a cobblestone-like appearance, hence the clever name for this classic dessert!

    Blackberry Cobbler

    Recipe

    Ingredients

    • 4 cups fresh blackberries
    • 3/4 cup water, divided
    • 2 cups all-purpose flour
    • 1 1/4 cups white sugar, divided
    • 1 teaspoon cinnamon, divided
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 3/4 cups cold butter
    • 2 tablespoons cornstarch
    • 2 tablespoons lemon juice
    • 1 teaspoon vanilla

    Supplies

    • 9×13 baking dish
    • small saucepan
    • large bowl
    • fork or pastry blender
    • medium saucepan
    • large spoon

    Directions

    1. Preheat the oven to 400 degrees. Wash and dry the blackberries. Set aside. Grease a 9×13 baking dish with butter, dust with flour and set aside.

    2. In a small saucepan, bring 1/2 cup of water to a boil. In a large bowl, pour in the flour, 1/2 cup of sugar, 1/2 teaspoon cinnamon, baking powder, and salt. Using a fork or pastry blender cut in the cold butter until you have a crumb-like mixture. Pour the boiling water over the crumb mixture. Stir until the mixture is moist.

    3. In a medium saucepan dissolve the cornstarch in the remaining 1/4 cup of water. Stir in remaining 3/4 cup sugar. Add the lemon juice, vanilla, remaining 1/2 teaspoon of cinnamon and fresh blackberries. Mix until well blended. Bring to a boil over medium-high heat, stirring frequently.

    4. Pour the blackberry mixture in the prepared baking dish. Next, using a large spoon, drop the crumb mixture into the baking dish by spoonfuls. Place the baking dish into the preheated oven uncovered for 20-25 minutes, or until the tops of the cobbler are golden brown. Serve with whipped cream or ice cream. Enjoy!

    Recipe Notes

    If you’d prefer to use a cast iron skillet to prepare your blackberry cobbler, skip the baking dish! Keep the baking time the same.
