At first glance, strawberry brownies may make you feel a tad skeptical, but we can assure you that these pink beauties with their heavenly strawberry fields scent are a swoon-worthy dessert.

    Strawberry brownies consist of only three ingredients, strawberry cake mix, oil, and eggs. They are then smothered in a luscious lemon-vanilla glaze resulting in a magical brownie-like texture that is both sweet and tart, with a mellow strawberry flavor. We guarantee that strawberry brownies will be your go-to summer dessert for years to come, for its yummy taste and ridiculously easy preparation.

    Ingredients

    • 2 boxes strawberry cake mix
    • 4 large eggs
    • 2/3 cup vegetable oil

    1. Preheat the oven to 350 degrees.

    2. Prepare an 9 by 13-inch baking pan with cooking spray. Set aside.

    3. In a stand mixer fitted with a paddle attachment, pour the strawberry cake mix, eggs, and vegetable oil. Mix until well blended.

    4. Remove the bowl from the stand mixer. Pour the batter in the greased baking pan. Using a wooden spoon spread the batter evenly.

    5. Place on the middle rack in the oven for 30 minutes or until a toothpick or butter knife comes out clean when placed in the center.

    6. Allow the strawberry brownies to cool for at least one hour. While the strawberry brownies cool, prepare the lemon-vanilla glaze.

    • 2 cups powdered sugar
    • 4 tablespoons lemon juice or cold water
    • 1/2 teaspoon pure vanilla extract
    • fresh strawberries, garnish

    1. In a measuring cup using a whisk, mix powdered sugar, lemon juice, and vanilla extract until smooth.

    2. Carefully pour the lemon-vanilla glaze over the entire surface of the cooled strawberry brownies. Slice, and garnish with fresh strawberries. Enjoy!

    Can I Cut The Strawberry Brownies Recipe In Half?

    Yes. To prepare brownies in an 8×8 inch baking dish, simply mix one box of strawberry cake mix with 1/3 cup vegetable oil and two eggs. Cut the lemon-glaze down by mixing one cup of powdered sugar, with two tablespoons lemon juice and 1/4 teaspoon of vanilla extract. The baking time will reduce slightly to 20 minutes at 350 degrees.
