Eggless keto butter cookies with almond flour are our new favorite cookie here at Oola! This incredibly easy keto cookie makes us want to snuggle up with a warm blanket and a hot cup of tea for a cozy evening at home. Keto butter cookies are reminiscent of classic shortbread cookies and beloved Amish butter cookies, without the added carbs and sugar, at only 0.4g net carbs per one cookie!
Don't let the simplicity of this eggless four-ingredient recipe fool you! Keto butter cookies are astonishingly delicious, delicate, and soft, buttery with subtle almond flavor; these decadent melt-in-your-mouth cookies taste absolutely sinful even though they're Keto!
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper or Silpat. Set aside.
In a medium bowl, combine the almond flour and powdered erythritol. Mix until well blended.
Add the butter and vanilla extract to the mixing bowl. Using your hands, work the ingredients until a soft dough forms. Avoid clumps of butter throughout the batter by working the dough for several minutes.
Using your hands, roll the dough into ten equal balls. Place each dough ball on the prepared baking sheet, keeping them about 2 inches apart.
Using a fork, gently flatten each cookie with a criss-cross pattern, as seen on a peanut butter cookie. Bake the cookies for 10 minutes in the oven until lightly browned on the edges.
Allow cookies to cool directly on the baking sheet for at least 5 minutes prior to being transferred to a wire cooling rack, or you risk having the cookies fall apart as you move them. Cookies will be very fragile after leaving the oven but will firm up as they cool.
Store keto butter cookies in an airtight container at room temperature for up to 7 days. Enjoy!
Suppose you don't have powdered erythritol on hand. In that case, you can always use a granulated sugar-free alternative and use it to make your own powdered erythritol by placing the sugar into a blender or food processor and blending until the sugar becomes powdered sugar.
Absolutely! We love that keto butter cookies are not only a healthy alternative to sugar-laden treats, but they're also very allergy-friendly. Keto butter cookies are both gluten-free, sugar-free, keto-friendly, and eggless. Make keto butter cookies, both vegan, and dairy-free by adding your favorite dairy-free butter alternative. We recommend Earth Balance Vegan Buttery Sticks.
A common problem when making keto butter cookies is not preparing a cohesive dough. To avoid flat cookies, take proper care to incorporate the butter into the almond flour with your hands for several minutes. Or you could mix your ingredients in a food processor until a dough forms.
Sure thing! Think of keto butter cookies as an excellent base for a unique cookie to suit your tastes. Even though we absolutely adore keto butter cookies as they are, we think they're the perfect candidates for thumbprint cookies! We also recommend adding lemon zest, keto-friendly Lily's Dark Chocolate Chips, toasted coconut, sea salt, cinnamon, or cardamon. The flavor possibilities are endless for this delicious easy keto cookie!
