Ingredients

  • 4 cups frozen cauliflower rice, thawed and drained
  • 2 cups shredded cheddar cheese, divided
  • 10 eggs
  • 1 teaspoon paprika
  • salt and pepper, to taste
  • 1/2 cup heavy whipping cream
  • 1 pound bacon, cooked and crumbled

Directions

  1. Preheat oven to 350 degrees. Lightly grease baking dish with nonstick cooking spray.

  2. In a large skillet, cook the bacon until crisp. Transfer to a paper towel-lined plate. Crumble when cool. Set aside.

  3. Defrost frozen cauliflower rice on the counter. Squeeze excess water from the cauliflower rice by opening and twisting the package, pushing downwards.

  4. Spread the thawed riced cauliflower into the bottom of the greased baking dish. Next, sprinkle the riced cauliflower with half of the shredded cheddar cheese. Set aside.

  5. In a large bowl, whisk together the eggs until the yolks and whites are thoroughly combined. Beat in the heavy cream until well blended. Add the paprika, salt, and pepper to taste. Pour the mixture over the riced cauliflower and cheese.

  6. Sprinkle the casserole with the cooled, crumbled bacon and top with the remaining cheddar cheese.

  7. Bake for 40-45 minutes or until the eggs are set and thoroughly cooked and golden brown. Serve immediately. Enjoy!
