    5-Ingredient Crockpot Chicken Fajitas

    Recipe

    Ingredients

    • 1 onion
    • 2 bell peppers, red and green
    • 3 large boneless skinless chicken breasts
    • 1 packet fajita seasoning
    • 1 1/4 cups chunky salsa

    Supplies

    • crockpot
    • two forks
    • slotted spoons

    Directions

    1. Wash and dry the produce. Thinly slice the onion and set it aside. Core, seed, and remove white ribs from both bell peppers, and then cut the peppers into thin slices. Set the onion and peppers aside.

    2. Halve the chicken breasts lengthwise and place them in the crockpot. Cover the chicken in the fajita seasoning, and pour the salsa on top. Toss in the onion and peppers.

    3. Cook on low for 7-8 hours or on high for 3-4 hours.

    4. When the chicken is cooked, use two forks to shred the chicken. Gently stir the chicken to coat it in sauce. Place the chicken and vegetables on tortillas. Use a slotted spoon when serving to prevent the tortillas from getting soggy from excess liquid left in the crockpot. Enjoy!

    Fajitas traditionally contain grilled meat, either beef or chicken, and cooked vegetables, the most traditional being bell peppers and onions. This recipe can easily be dressed up with additional vegetables, spices, and meats or garnished with an assortment of tasty toppings.

    Taking Your Crockpot Fajitas To The Next Level

    Fajita Seasoning

    You can make your own fajita seasoning and customize the spiciness of your dish. Fajita seasoning usually contains chili powder, salt, paprika, oregano, onion powder, and garlic powder. Sometimes you’ll see recipes that include cornstarch, which helps the seasoning attach to the meat. For an extra spicy kick, you can add some red chili flakes.

    Mix these ingredients for a delicious fajita seasoning:

    • 2 teaspoons chili powder
    • 1 1/2 teaspoons salt
    • 1 teaspoon paprika
    • 1 teaspoon oregano
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder

    Vegan

    Replace the chicken in the fajitas with a mixture of black beans, chili beans, and quinoa. Be careful when choosing your tortillas, since some wheat flour tortillas may contain lard. Corn tortillas are usually vegan-friendly.

    Gluten-Free

    Pre-made seasoning packets can sometimes contain gluten; it’s essential to check the labels of all seasoning packets for this reason. McCormick offers a gluten-free fajita seasoning mix that you can find at your local grocer, or you can prepare your own fajita seasoning. Corn tortillas are made from corn flour, which should be free of gluten. However, there is a risk of cross-contamination with gluten during processing and packaging. If you’d like to be worry-free, pick up some gluten-free tortillas.
