Our easy instant pot “rotisserie” chicken is the perfect solution for a busy weeknight dinner. Instant pot “rotisserie” chicken is tender, juicy, and fall-off-the-bone delicious. Prepared with a simple spice rub, this classic dish tastes just the way a rotisserie chicken would from the grocery store. But, you’re in control of the ingredients, making this an incredibly versatile meal.

    Easy Instant Pot “Rotisserie” Chicken

    Recipe

    Ingredients

    • 1 (4-5) pound whole chicken
    • 2 teaspoons salt
    • 1/2 teaspoon pepper
    • 2 teaspoons minced garlic
    • 2 teaspoons paprika
    • 4 tablespoons peanut oil
    • all-purpose seasoning (McCormick All Purpose Seasoning Garlic Onion Black Pepper and Sea Salt), to taste
    • 1 1/2 cups chicken stock
    • barbeque sauce, to taste

    Supplies

    • paper towels
    • small bowls
    • instant pot
    • pastry brush
    • two spatulas or tongs
    • large plate
    • trivet
    • tin-fil (optional)
    • baking sheet (optional)
    • digital instant-read thermometer

    Directions

    1. If the chicken was previously frozen, make sure the chicken is now completely thawed. Remove the giblet package from the chicken’s cavity, discard. Pat the chicken dry with a paper towel. Set aside.

    2. In a small bowl combine the salt, pepper, minced garlic, and paprika. Pour in the peanut oil and mix until well blended.

    3. Preheat the instant pot by setting it on the sauté mode on normal.

    4. Using a pastry brush, spread half of the spice mixture on the breast side of the chicken. If desired, sprinkle with an all-purpose seasoning to taste. Then carefully using your hands lower the chicken breast side down, into the preheated instant pot.

    5. Using the pastry brush, spread the remaining spice mixture on the other side of the chicken. If desired, sprinkle more all-purpose seasoning on the other side of the chicken, to taste.

    6. Sauté the chicken on the breast side for about 3 minutes. Using two spatulas or a pair of tongs flip the chicken over. Continue to sauté for another 3 minutes.

    7. Using the spatulas, or tongs – very carefully remove the chicken from the instant pot. Place the chicken on a large plate.

    8. Place a trivet in the bottom of the instant pot. Carefully place the chicken, breast side up back into the instant pot on top of the trivet. Pour the chicken stock into the instant pot.

    9. Place the lid on the instant pot, lock, and set on manual for 25 minutes. Allow the instant pot to naturally release, about 15-20 minutes.

    10. Optional step: Transfer the chicken to a foil-lined baking sheet and coat with barbecue sauce. Broil the chicken in the oven for 3-5 minutes or until the barbecue sauce has caramelized. Serve and enjoy!

    Recipe Notes

Check out why you may want to rethink washing your raw chicken before cooking it.

Placing the chicken on a trivet after sautéing keeps the chicken from sitting in chicken broth in the bottom of the instant pot while cooking.

Use a digital instant-read thermometer to check the temperature of the chicken. The temperature should read 165 degrees. Place the chicken back in the instant pot for an additional 2 minutes for every 5 degrees below 165 degrees until the chicken is finished cooking.

    Winner Winner Chicken Dinner

    instant pot chicken

A tender, juicy chicken dinner is a cozy weeknight comfort food. There are several ways to fix this hearty meal, either baked, grilled, or slow-cooked. However, preparing this dish can be extremely convenient when cooked in an instant pot. It yields similar results to that of a slow cooker without long wait times. The meat will be remarkably tender and moist.

If you prefer crisper skin, feel free to brush the surface of the chicken with olive oil. Broil the chicken in the oven for 3-5 minutes. Serve with buttery garlic bread and roasted asparagus. Enjoy!
