Eggless Keto Butter Cookies With Almond Flour

Ingredients
- 1 cup blanched almond flour (Bob’s Red Mill Super-Fine Almond Flour)
- 1/4 cup powdered erythritol
- 3 tablespoons salted butter, softened
- 1 teaspoons pure vanilla extract
Supplies

- parchment paper or Silpat

Directions
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper or Silpat. Set aside.
In a medium bowl, combine the almond flour and powdered erythritol. Mix until well blended.
Add the butter and vanilla extract to the mixing bowl. Using your hands, work the ingredients until a soft dough forms. Avoid clumps of butter throughout the batter by working the dough for several minutes.
Using your hands, roll the dough into ten equal balls. Place each dough ball on the prepared baking sheet, keeping them about 2 inches apart.
Using a fork, gently flatten each cookie with a criss-cross pattern, as seen on a peanut butter cookie. Bake the cookies for 10 minutes in the oven until lightly browned on the edges.
Allow cookies to cool directly on the baking sheet for at least 5 minutes prior to being transferred to a wire cooling rack, or you risk having the cookies fall apart as you move them. Cookies will be very fragile after leaving the oven but will firm up as they cool.
Store keto butter cookies in an airtight container at room temperature for up to 7 days. Enjoy!

I Don’t Have Powdered Erythritol. Can I Still Make Keto Butter Cookies?
Suppose you don’t have powdered erythritol on hand. In that case, you can always use a granulated sugar-free alternative and use it to make your own powdered erythritol by placing the sugar into a blender or food processor and blending until the sugar becomes powdered sugar.
