If you’re a carb fanatic, giving up pasta on a keto diet is anything but easy. Fortunately, there are various solutions to the unrelenting yearning for a heaping, comforting warm bowl of pasta. Keto-friendly noodle substitutions include shirataki noodles (miracle noodles), zoodles, nuPasta, Newdles, and keto noodles using fathead dough. Yet, one of our favorite ways to prepare pasta fit for keto is by using hearts of palm, the pale white inner core from palm trees.
One bite from a dish of hearts of palm pasta and you’ll undoubtedly agree, it’s outstandingly delicious. When prepared correctly, hearts of palm appear remarkably similar to noodles, with a pleasant crispy and creamy-like texture that works beautifully with any pasta sauce.
What Does Hearts of Palm Taste Like?
At first glance, the white, tube-shaped hearts of palm look similar to a monstrous mozzarella stick and can be pulled apart like a cheese stick as well. When you taste hearts of palm, pasta will not be the first dish to comes to mind. Hearts of palm are reminiscent of artichoke hearts but have a more delicate, slightly lemony, sweet flavor, making it the ideal blank canvas for introducing other flavor profiles.

Hearts of Palm Pasta
- 2 cans hearts of palm
- 6 slices of bacon
- 2 cloves of garlic, minced
- 1/2 cup parmesan cheese
- 3 eggs
- salt and pepper, to taste
- medium bowl
- saute pan
- paper towel-line plate
Drain and rinse your hearts of palm. Slice the hearts of palm into the same length as noodles. Then peel and mince the garlic. Set aside.
In a medium bowl, whisk the eggs until the yolks and whites are blended. Add the parmesan cheese, salt, and pepper to taste. Set aside.
Dice the bacon into bite-sized pieces. In a saute pan, over medium heat, fry the bacon until desired doneness. Turn the heat to low, and remove bacon to a paper towel-line plate reserving the bacon grease.
Add the sliced hearts of palm and the minced garlic to the saute pan with the bacon grease. Stir to coat.
Pour in the egg mixture, continuously stirring. The egg mixture will warm and become creamy. However, if you stop stirring, you risk the eggs scrambling, losing that delicate creamy texture. If you notice your eggs are beginning to scramble while you’re stirring, immediately remove the pan from the heat. Your dish is complete when the egg mixture thickens and resembles a cream sauce. Stir in your bacon, sprinkle with extra parmesan cheese and top with parsley. Serve immediately. Enjoy!
