Philly Cheesesteak Sloppy Joes

Ingredients
- 1 pound ground beef
- 1 tablespoon butter
- 1/2 yellow onion, diced
- 1 green pepper, diced
- 1/2 cup cremini mushrooms, coarsely chopped
- 1/2 tablespoon garlic, minced
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon kosher salt
- 1/2 teaspon black pepper
- 1 tablespoon cornstarch
- 1 cup beef broth
- 1/4 cup Parmigiano-Reggiano, grated
- 1 cup provolone cheese, shredded
- 5 brioche buns
Supplies

Directions
Add ground beef to a large skillet and cook until brown, on medium-high heat. Remove beef from the pan into a medium bowl and set aside. Drain excess grease from skillet.
In the same pan used to cook the ground beef, add a tablespoon of butter. On medium-high heat, sauté the onions, peppers, and mushrooms until tender. Add the garlic and cook until fragrant.
Return the ground beef to the skillet. Add ketchup, Worcestershire sauce, kosher salt, and pepper. Stir to combine.
Pour cornstarch into a small bowl. Slowly pour the beef broth over the cornstarch while whisking to avoid lumps from forming.
Add cornstarch mixture to the skillet. Reduce to a simmer, stir and cook until liquid reduces to a thick saucy consistency, about 3 to 5 minutes.
Once the sauce has thickened, turn off heat and blend in Parmigiano-Reggiano and provolone cheeses until melted.
While the sauce is simmering, lightly toast the brioche buns by placing them under the broiler for 2 minutes, or until golden brown.
Fill the insides of brioche buns with the sloppy Joe mixture. Serve immediately. Enjoy!
