• 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1 1/4 cups buttermilk
  • 2 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon pure vanilla extract

  • pure maple syrup


  1. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set the bowl aside.

  2. Using a whisk, beat the egg in a medium bowl until it is light in color and frothy. Add the buttermilk and whisk until well combined.

  3. Add the egg-and-buttermilk mixture to the flour blend. Stir until the batter is completely smooth.

  4. Add the melted butter, sugar, and pure vanilla extract to the batter. Blend well.

  5. Coat a large nonstick skillet or griddle with cooking spray and place it on medium heat.

  6. Using a ladle, scoop 1/4 of a cup of batter onto the skillet or griddle. Use the back side of the ladle to spread the poured batter into a 5-inch circle. Cook until bubbles appear on the surface of the pancake and the edges start to brown.

  7. Using a silicone or plastic spatula, carefully flip the pancake and cook the other side, about 2 minutes. Repeat the process until you have prepared all of the batter.

  8. Top your pancakes with a pat of butter and a drizzle of pure maple syrup. Serve immediately.
